channel today I'm sharing with you my meal prep for this week and I just want to tell you guys that Mill prepping was the very last thing that I wanted to do today I just didn't want to do it but now that it's done I'm so glad and I'm ready to have a successful week I set myself up for it and I'm so thankful for that so today I made cracked-out egg salad I have made this in a melt prep before and I'm making it again today I will link the original recipe for that down below it's absolutely delicious and only two points per serving for the cracked out egg salad I am doubling the recipe and then for our lunches throughout the week I made a buffalo pasta dish that came from drizzle me skinny comm again I will link that recipe down below and I did also double this recipe as well so that one came out to six points per serving for me and then I prepped some foil packets for dinners and those came out to five points each make sure you subscribe if you're new now let's get into the meal prep the first thing I want to start on is getting my eggs hard-boiled for my cracked out egg salad so I've got my pressure cooker bowl here and I have two cups of water in there and then I put the steamer basket on top all right now I've got 12 eggs in here min and take this to the pressure cooker all right now I am cooking these on high pressure for six minutes I will link this pressure cooker in the description bar below this video it's a really great price and it works super well so once these are done I'll just put them in an ice bath I've already started some water boiling on the stove and now I'm going to cook my pasta I need five cups of this total now that I have all that going I want to start cooking the chicken for the pasta I have two packages a chicken breast here and I am going to be baking these in the oven I'm going to season both sides with salt pepper and garlic powder I've already got my oven preheated to 400 degrees I'm gonna put this in for probably about 30 minutes these are pretty large chicken breasts so they're gonna probably take a little bit longer and I will flip them halfway through as always when cooking chicken it is best to use a meat thermometer if you want to be absolutely positive that it's cooked properly okay so for now I'm kind of at a standstill with all the other recipes while the pasta and the chicken and the eggs are all cooking so I'm gonna start getting my foil packets together I am going to chop these little white boiler onions as well as my peppers and I've got these green beans these are all ready to go I don't think I need to trim these any further and then I've also got my Italian turkey sausage links and I'm gonna be dicing each of these into coins as well okay I've got my veggies chopped I also talked to my turkey sausage links and you can see that this kind of sausage has a thinner casing on the outside and so when I chop it it just kind of pushes up which is fine when I'd cook this in the past I actually just took the casing out and browned it up in a pan but that's besides the point also when I update for you the chicken is out of the oven and my eggs are also done they sat in a nap ice pack for a few minutes and then I did peel them so for these foil packets I've got five sheets of foil I'm gonna spray each one with a little bit of olive oil spray I'm gonna put the sausage in there and then I've got all of my veggies to add so I'm just gonna add some peppers some of my onion I have some pre washed and sliced mushrooms and then and then the last thing is a few slices of turkey pepperoni alright that six pepperonis sorry I just realized I didn't even have the camera showing what I was doing here I added six pepperonis I'm gonna season these with some Italian seasoning and some garlic powder and there is one foil packet done these are nice and large because there's so many veggies which I love that alright all of my foil packets are here and my oven is still at 400 degrees I'm gonna put these in for 25 to 30 minutes and then I will flip them over like that half way through okay my foil packets are out of the oven and just so you can see what they look like there you go I'm just gonna kind of close that back up as best I can but these come out to five points each it's four points for the turkey sausage and one point for the pepperonis these fries really well if you wanted to freeze them if you didn't want to cook them inside of a foil packet these also make really great one-sheet dinners where you just throw all these ingredients on one sheet pan and toss it in the oven it'll cook up just as well now I want to finish my egg salad you can see I have all 12 eggs here smashed up I'm going to need six tablespoons of light mayo I just measured that out on my food scale here it's so much easier than trying to use a tablespoon measurer and then most of the mayo get stuck in the tablespoon anyways I have this scale linked down below if you're interested in the one that I like next up I need two tablespoons of ranch dressing mix now I need 1/2 a cup of bacon bits please remember also that I am doubling this recipe so that's why I'm using so much lastly I need 2/3 of a cup of reduced fat Fiesta blend cheese or at least that's the cheese that I choose to use I think the original recipe also calls to put celery in here which I don't think I want to do that I do want to put green onion in here but I forgot to buy some so sadly I just have to leave that part out now I'm adding half a teaspoon of Worcestershire sauce and I'm also gonna add a little bit of salt and pepper and there it is all done this is so good with the green onion I'm really sad I don't have any to put in there I also think this would be super good if you like a little bit of spice to put some chopped jalapeno in there I might have to do that next time but like I said I doubled this recipe so it's 12 servings here at 1/3 cup each serving and it's 2 points per serving all right I have all of my pasta here I obviously cooked it drained it and then just put it back in the pot so it's nice and cooled off now and in her original recipe she cooked her chicken in the crock pot with her soup and buffalo sauce I didn't have time for the crock pot today and I was already using the pressure cooker for my eggs so I'm just gonna add it all to the pasta and cook it on the stove and hope that that works fine to my scent I'm adding two cans of 98% fat-free cream of chicken soup next I'm adding 1 cup of Frank's red hot wing sauce I need 6 tablespoons of third less fat cream cheese I need half a cup of light ranch all right that's everything I need for now I'm just gonna put this on the stove over a medium-high heat and get this all incorporated ok the pasta looks great I've got all of my chicken chopped and now I'm just putting this in here the recipe calls for shredded mozzarella but this is honestly super rich already so I mean just omitting that all right this is done and ready to be put into containers for my veggies this week I am using these Birdseye french cut green beans these are frozen and I find that I don't have to pre cook these they reheat just fine when I reheat these to eat them I am going to season my green beans with some garlic salt all right now for the pasta this is supposed to be 1 cup servings all right so this recipe it originally was supposed to make 6 1 cup servings and I doubled the recipe but mine actually made 15 servings so of course the green beans are zero and it is six points for the pasta thank you so much
